The Monthly Bite: Best New Openings & Re-Openings in Copenhagen Vol. 9

Denmark is slowly starting to go back to normal after lockdown so this month, we’re bringing you three magnificent openings and re-openings. That’s right, lockdown is over, I’m hungrier than ever, and ready to show you the best of the best in Copenhagen’s food scene!

I’m proud to present a long-overdue visit to Tèrra, an urban trattoria by Il Matarello; the re-opening of one of my all-time favorite restaurants ever, Amass, and its launch of Amass Fried Chicken – a wine and fried chicken bar with the most idyllic garden in town; and a new go-to caffé in Nørrebro, Grums.

Dust off your bikes and get ready to explore Copenhagen. These are the best new openings and re-openings in Copenhagen this month:

Tèrra

From the owners of Il Matarello – the pasta shop and lab at Torvehallerne – comes Tèrra. Romans Valerio and Lucy stand behind this project and boy was it a pleasant surprise. Not because there was ever any reason to doubt their food (they are Romans…), but because Tèrra is not a classic Italian restaurant. It is contemporary, innovative, and dare I say unique.

 

 

The modern Roman trattoria is on a quiet street between Østerbro and Nørrebro. Upon entering, you’re greeted by friendly Italian staff, an open kitchen, brick walls, a beautiful selection of natural wines, and authentic Italian food reinterpreted in a Scandinavian way.

The wine pairing by Lucy is perfect and the attentive service from the rest of the staff is brilliant – I rarely feel this welcome. Grazie mille!

Amass & Amass Fried Chicken

Amass ranks high in every food lover’s list worldwide. It is a destination restaurant; a temple of modern, zero-waste, creative fine-dining. Its founder, Matt Orlando, has worked in some of the best kitchens in the world, and for several years was the head chef at Noma.

 

 

Orlando and the team started Amass in Refshaleøen in 2013 when this raw, sketchy island was the total opposite of its present hip version. Risky? Well, that’s what Amass’s cuisine is. But it’s also refined, sublime, and genuinely creative: “At Amass, the food is created in the moment and is ever-changing. It is influenced not only by our terroir and weather but by carefully examining every ingredient, figuring out which techniques will pay the highest respect to the ingredient as a whole”. When they say “whole,” they really mean it. Amass has found innovative uses for coffee grounds, lemon peels, and flower stems to name but a few.

 

 

Due to its location, Amass has a large, beautiful garden where they grow their own produce. And now, it’s also home to AFC, their wine and fried chicken bar. Anyone that’s visited Broaden & Build will know how good their chicken is, and now it’s available with a glass of something special. Cheers!

Grums

The latest addition – and a great one at that – to Copenhagen’s specialty coffee scene. Located in the heart of Nørrebro, just a few steps from Runddel.

Madeline and Mathilda, its friendly founders, have created a small coffee universe where, naturally, coffee is the center around which homemade, organic food orbits. They keep things simple and opt for quality over quantity. Simple is best afterall.

 

 

The space is hyggeligt and the crowd is as international as Nørrebro itself. Danish classics like morgenbolle are available, plus tasty avocado toast, skyr, freshly squeezed juices, and the heavenly all-butter croissant from Il Buco.
