April 2020 is a month like no other. While spring slowly takes over Copenhagen, we are collectively in quarantine, social distancing, or self-isolating. Skærtorsedag
The Thursday before Easter is a public holiday called Skærtorsedag, known as “Maudy Thursday” in English. It commemorates the last supper of Jesus Christ with the Apostles, and what better way to celebrate than with a nine-cabbage soup? Also known as Skærtorsdag søbekål, the soup was eaten because it was packed with nutrients that would ensure health for the coming year. As a bonus, the soup would ward off evil demons.
