Copenhagen is almost back to normal and some of the best restaurants in town have returned to the dining scene – we couldn’t be happier. We’re focusing on a few, showcasing their dining experiences and the passionate people working hard to provide it.

Restaurant Brace

A dinner at Brace might just leave you speechless, I’m still struggling to find the words to describe all the fantastic dishes, the on-point wine pairing, attentive service, relaxed atmosphere, and cozy décor.

Defined as “modern Italian cuisine embracing the Nordic nature,” the menu blends traditional Italian styles with the best seasonal, local, organic, and wild ingredients.

Italian co-owner Nicola Fanetti has an impressive CV: he’s worked at some of the best restaurants in Italy and Denmark, including Noma and Era Ora, so it comes as no surprise that he has understood and mastered classic Italian gastronomic traditions as well as Scandinavian. Every single dish feels Italian to its core, but you always understand that you are eating in Scandinavia, as some of the ingredients are hand-picked from hyper-local, small purveyors that have a unique passion for what they produce. To them, this is a key element in finding quality.

 

 

Ursula, Nicola’s wife and the boss outside of the kitchen, oversees the rest of the restaurant. She personally painted and decorated the entire restaurant, putting love and care into every single detail of the dining room. There is a sense of tranquility and peace embued within the space, like an urban oasis in the middle of the busy streets of the Latin Quarter. Ursula visualized a dining experience where each table is center stage, and used lighting to create a personal moment for each guest.

The wine pairing never misses the mark, elevating and complimenting every single dish. The passion of the sommelier is unique, not to mention his knowledge – he knew every detail about the wines he served. This admirable exchanged was matched by the enthusiasm of the staff working that evening, who were genuinely friendly and proud of their work.
